Chevra (Low Carb Snack)

You will absolutely love my protein rich low carb chevra. Since I use extra thin poha it reduces the carbs tremendously! This recipe was introduced to me by my friend Hansa. I’ve slightly modified the recipe to have more nuts and less poha. This version can be keto friendly by further reducing the carbs by putting just 1 cup of poha and removing the raisins. This recipe was passed on to my friend by her mother. She has fond memories of her mother making it in a karahi ( a deep pan) used in Indian and Pakistani recipes. This version is simple as we roast the poha in the microwave. The rest you put together on the stove in a big saucepan. You’ll definitely want to try this healthy snack with its slightly spicy and sweet flavor.

Ingredients:

  • 2 cups super thin nylon Poha ( pic is shown above)
  • 2 cups mixed nuts. I used half cup of each of the following: pistachio, chopped almonds, peanuts, walnuts
  • 1/2 cup coconut flakes
  • 1/2 cup raisins
  • 10 count curry leaves
  • 2 tbsp olive oil ( or any oil of your choice)
  • 1 serrano pepper chopped
  • 1 tsp turmeric1 tsp salt
  • 1/2 tsp sugar

Recipe:

Warm up the poha in the microwave for 1 minute in a dinner plate, one cup at a time.

Warm up the oil in a big saucepan at medium high. Put one piece of pepper to see if it is hot enough. It will make a cracking sound which means it’s ready and put all the curry leaves and serrano peppers.

Now lower the heat to medium after 1/2 minute. Then add all the nuts, coconut flakes and raisins. Lastly add turmeric, salt and sugar.

Roast for 5 minutes. Add poha and roast for another 5 minutes on medium low. Stoves are different. Make sure it does not burn. Always mix while roasting. Yumm! The chevra is ready.

You can let it cool in the same pan or put in another container to cool faster. After it is completely cooled down, store in an airtight container. These pohas are only 23 grams of carb per cup. So you get a healthy, simple, protein rich, and delicious snack on the go!!!
