Mixed Veggies (Entrée)

My sister Hamida gave me this recipe few years ago. It was passed on to her by a friend. I made it a few times and have settled on the recipe below. This is now the most popular veggie dish in my daughter’s friends circle. This dish can be eaten with chapati, rice or naan. You can also fold it into samosas which is easy to take for lunch. Check out my phulka samosa recipe which is part of my okra recipe and my ground chicken samosa recipe. I use mostly organic veggies to keep my cooking clean and healthy.

Ingredients:

  • 1 packet shredded organic carrots from whole foods.
  • 3 medium tomatoes (about 11/4 lbs)
  • 1 bunch organic green onions
  • 2 medium potatoes (about 3/4 lb)
  • 1/2 cup green peas
  • 3 tbsp oil
  • 2 tsp coriander powder
  • 2 tsp cumin powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp turmeric
  • 1/4 tsp salt

Recipe:

Chop the tomatoes and puree them in a blender. Chop green onions fine. Peel and cut potatoes into cubes or like fries.

Put oil in a big saucepan on medium heat. Add the pureed tomatoes and spices. Cook for 15 minutes on medium heat till oil separates from sauce.

Add potatoes and carrots. Cook for 30 minutes at medium low, checking after 15 minutes.

Not all potatoes cook the same. So timing may vary. Add peas and cook for 5 more minutes. Add chopped green onions and mix.

Take it off the stove after a couple of minutes. You can make samosas from this dish after it cools down.This dish is so yummy!!
