
Samosas are one of the most popular appetizers in Indian and Pakistani cooking. My mom used make the most amazing samosas; deep frying them in a karahi ( a deep pan with handle). I used to make them the same way. It took a very long time as you have to fold up each samosa individually. Also, frying them was quite messy and smelly and it was time consuming. But, I happily made them since I love samosas!
These days I use phulka chapati instead of samosa wrapper (usually made out of maida flour) and I bake them in the oven or use the air fryer. For large batches I use the oven, otherwise the air fryer is perfect for a quick snack. It is definitely faster and less messy to make samosas with the phulka chapati. Also, it’s healthier to bake them as you are not deep frying.
Ingredients:
- 2 lbs ground chicken
- 1 packet phulka roti ( I used 14 out of the 20 in a packet)
- 3/4 cup water
- 2 tbsp garlic ginger paste
- 2 tsp ground serrano peppers
- 1 tbsp gharam masala
- 3/4 tsp salt or according to your taste
- 1/2 tsp cayenne pepper
- 1 big bunch cilantro finely chopped.
- (optional) half a medium onion finely chopped
- 2 tbsp oil or butter
Recipe:
Put the ground chicken with all the ingredients except oil in a saucepan.

Mix well. Cook on medium high for 5 minutes and then cook on medium for 20- 25 minutes with lid on. To get rid of excess water put on medium high, stirring constantly till all the water has evaporated.

Lastly, add the chopped cilantro and the optional chopped onion and 2 tbsp oil or butter.

Mix well. Let it completely cool down.

Making samosas:
Cut phulka chapati into half.

Fold the half into quarter size and close one side.

Fill with chicken mix and close.


Before baking brush or spray with oil. Warm the oven to 400 F and bake for 20 minutes in oven, flipping them over after 10 minutes. If using air fryer set the air fryer to 400 F and bake for 10 minutes, flipping them over after 5 minutes. Only 6 samosas will fit in the air fryer.

Once the air fryer is warm you can reduce the time by 2 minutes for the next batch of samosas. You can also store the baked samosas in a ziploc bag and freeze them too. It’s a very convenient lunch or snack to take to work and is good for you! My kids and my grandson love them !!!
Bonus: Home made gharam masala recipe:
- 2 tbsp whole or ground cumin
- 2 tsp whole pepper
- 1 1/4 tsp cloves
- 1 thin stem of cinnamon
Grind all the Gharam masala ingredients together and store in air tight container.
