Herb Seasoned Salmon (Low Carb Entrée)

My older son always raved about the flavor and flakiness of salmon but I was very hesitant to try it. In those days my favorite fish was halibut. Finally I decided to give it a try and I liked it! Now I eat Salmon every week and am a big fan. Being new at low carb dieting I consider salmon a key addition to my cooking repertoire. Salmon is also high in omega 3! That is a win, win for us keto dieters. I buy the individually wrapped frozen sockeye salmon from Costco. You can double the recipe below if you eat it with rice. You still only use one piece of Salmon.

Ingredients

  • 1 piece salmon
  • 1 tbsp oil
  • 1 tsp garlic paste
  • 1/4 cup cilantro
  • 1/4 Serrano pepper ( can substitute 1/8 tsp cayenne)
  • 1/4 small tomato
  • 1/8 tsp salt

Recipe

Blend cilantro, tomato, Serrano. Season the salmon with it and also add garlic paste and salt. Let it marinate for half an hour.

Warm up the oil in a small pan on medium. Put the seasoned salmon in it for one minute with the skin down. Then flip the salmon and cook for 4 minutes with the lid on. Remove from the stove and let it sit for a minute. Squeeze lemon and enjoy with rice or salad!!
