Sweet And Sour Shrimp Entrée

We are all going through some very challenging times in our lives because of the COVID-19 virus so I decided to share my family’s favorite recipe. It does have some sugar but it is a good healthy comfort food for us. In fact I have entertained a lot of my in-laws and my siblings with this recipe in the past and it has been their favorite dish as well. Warning, the fried shrimps do take some time but they are worth the effort. I remember when my kids were young half of the fried shrimp would finish before we even started dinner! Please give me your feedback when you try it.

Sauce – Ingredients

  • 1 can of 6 oz tomato paste
  • 1 cup water
  • 1 cup vinegar
  • 3/4 cup sugar
  • 1/2 small onion
  • 1 carrot peeled and sliced
  • 2 tbsp oil

Sauce – Preparation:

Mix tomato paste, water, vinegar, sugar. Warm up oil and sauté the onions and carrots. Add the mixture and simmer till carrots are done.

Fried Rice – Ingredients:

  • 4 eggs
  • 4 cups water
  • 2 cups rice ( wash and soak 15 minutes)
  • 2 tbsp oil to cook egg.
  • 2 tbsp oil to stir fry and cook grated carrots and bell peppers
  • 1-2 tbsp soy sauce
  • 1 cup grated carrots
  • 1/2 cup finely sliced or cubed bell peppers
  • 1/2 bunch cilantro ( washed and finely chopped)
  • Salt and pepper for taste

Fried Rice – Preparation:

Boil rice with water. Cook halfway. Drain water and set aside. Crack eggs in a bowl, beat them, and then fry them scrambled. Then warm up the oil in a big sauce pan and stir fry the carrots and bell peppers. Cook for 5 minutes on slow then add scrambled eggs, cilantro, soy sauce, salt, and pepper. Lastly, take an empty pot and add some of the rice and some of the veggie mix from the sauce pan and mix them together. Repeat this process until all the rice and veggie mix are in the pot. Keep the pot on slow heat to cook the fried rice for about 10 minutes. Stir the fried rice once. Yumm!! You have a very healthy fried rice!!!

Fried Shrimp – Ingredients:

  • 30-35 shrimps. About a pound of medium sized shrimps
  • 2 eggs
  • 8 tbsps corn starch
  • 1/8 tsp baking soda
  • Salt and black pepper to taste. You can substitute cayenne pepper for black pepper.

Fried Shrimp – Preparation:

Mix the above ingredients together. Let it sit for 5 minutes.

Then deep fry in a small pot or pan so as not to waste too much oil. Fry about 5-6 shrimps at a time, dropping each coated shrimp individually into the oil.
