Okra (Entrée)

I grew up in a large family. My mom used to cook really delicious but healthy food. Growing up, my favorite vegetable was okra. When I got married I found out that okra was my husband’s favorite vegetable too. Now all my children (grown up now) love okra. I remember working hard to get them looking good and tasting good too! It took a long time to get the right texture. It was a very tedious and time consuming process. But I still made it!

Okra is a slimy vegetable so you have to first sauté it to get rid of the slime. You have to watch it all the time during this process. Recently I bought an air fryer and have been trying all kinds of healthy dishes in the air fryer. Well guess what? I tried to use the air fryer to get rid of the slime, and it worked!!! Now you can make a tasty crispy okra without the hassle! My recipe is both simple and tasty.

My favorite oil is extra virgin olive oil, so I always cook my dishes at medium temperature.

Ingredients:

  • 2lbs fresh okra
  • 2 medium tomatoes
  • 2 medium potatoes
  • 3 tbsp olive oil
  • 1 tbsp crushed garlic
  • 1 tbsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp turmeric ground
  • 1/4 tsp cayenne pepper ground
  • 1/8 tsp ground black pepper
  • 1/4 tsp salt

Recipe:

Cut the top and bottom of okra and slice into small pieces. After cutting you’ll have 1 1/2 lbs of Okra. You can also get cut up okra at some Indian/ Pakistani grocery stores. Also, peel the potatoes and slice them into thin wedges.

Then add 1 tbsp oil to it and mix well. Put half of it in the basket of the air fryer and cook it on 360 for 10 to 12 minutes, shaking it up halfway. Do the same with the other half. The end result after it has gone through the air Fryer looks like this

Both potatoes and okra will be almost cooked and crispy.While the cut up okra/potatoes are in the air fryer, warm up the remaining 2 tbsp oil in a sauce pan and add thinly sliced tomatoes( you can also blend the tomatoes) . Add all the spices and mix and let it cook on medium for a couple minutes the put the lid on and cook on low for 10-15 minutes.

The end result will be similar to this

Then add the air fryer cooked okra and potatoes in this mixture and mix it together gently. Start heat at medium but then leave it on slow for 10 minutes with lid on. You will have a yummy dish of okra similar to the following picture.

It’s uncooked chapati which you can cook on a pan.

It is both healthy and delicious. If you love okra this is the way to go! It is simple, tasty and quick to make!!! Sometimes I use this okra to make samosas. Imagine eating okra at work without having the hassle to carry chapatis separate. My daughter loves them as they are very convenient to eat at work! It’s like finger food but it can be a full lunch! Then fold it and close up one side

Then fill it with the okra you just made. 🥰

Then close this opening.

Brush then with olive oil and put in the air fryer at 380 for 10 minutes. Brush the bottom of the air fryer basket with extra oil. Remember to flip it after 5 minutes. In 10 minutes these beauties will be crispy and delicious lunch for work!

    1. Thx for liking my recipe. If you don’t have air fryer you can warm up a couple tbsp oil in a saucepan and stir fry till the okra losses the stickiness.
