Green Beans (Low Carb Entrée)

Recently I visited my son who lives in the east coast. He showed me a different recipe he uses to make green beans. It is quick and easy and simpler than mine. It’s always nice to try something new, something with a different flavor. So I tried making it, and I loved it! Children also love the taste of this recipe. And for those who don’t like tomatoes, this recipe is perfect for you!

Ingredients:

  • 1 lb green beans
  • 1/2 medium onion finely chopped
  • 4 tbsp olive oil
  • 1/2 bell pepper thinly sliced
  • 1-2 tbsp soy sauce
  • 1 tbsp cumin or coriander coarsest ground
  • 1/2 to 1 tbsp vinegar
  • 1/2 tsp salt
  • 1/4 tsp ground pepper

Recipe:

Steam the green beans and keep them aside. I steam for 8 minutes after the water is boiling in the steamer.

Warm up the oil in a large saucepan and add the cumin or coriander. Let it simmer on medium to get the aroma. Then add onions and saute till the onion is translucent. Add bell peppers, soy sauce, vinegar, salt and pepper. Add about 2 tbsp water and let it cook for 5 minutes on slow. Then add the green beans and cook for another 5 minutes and serve! 😊
